Island Treasure Cookies
Fantastic around the Holidays - or any time of year...
You'd better make an extra batch ... these ALWAYS go fast ...
1 2/3 cups all-purpose flour
¾ tsp baking powder
¾ tsp salt
½ tsp baking soda
¾ cup plus 2 Tbs butter, softened
¾ cup brown sugar
1/3 cup granulated sugar
¾ tsp vanilla
1 egg
¾ cup toasted coconut (2 oz.)
¾ cup chopped macadamia nuts (3 ½ oz)
1 pkg (11 ½ oz) chocolate chips
1.) Combine flour, baking powder, salt, and baking soda; set aside
2.) In medium bowl, beat butter, sugars, and vanilla until creamy. Add egg – mix well.
3.) Gradually add flour mixture.
4.) Stir in coconut, macadamia nuts, and chocolate chips.
5.) Drop by heaping tablespoons – 3" apart, onto ungreased cookie sheet
6.) Bake at 375 F for 12 minutes or until lightly browned.
Allow to stand for 2 min before removing
from cookie sheet
Yield: 32 cookies, 3 ½ inches each
